    Heather, I really like the sweet potato nest recipe, but I’m not sure about baking the avocado cream. Wouldn’t it be okay to just add the cream after cooking the sweet potato and kale filling? There is nothing in the cream that really needs to be cooked is there? I guess I don’t care for the appearance of the browned avocado. Just a thought.

      Hi Sheila – for sure! You can definitely bake the nests, and add the avocado after! I think I would like that, so long as the avocado was at least room temperature and not chilled 🙂 Hope you enjoy!
