This delicious dip is based on miso, which is a fermented soybean paste, and flavored with toasted sesame oil. It makes a great dip for vegetables or spring rolls, or can be used as a dressing for many different salads.

1Tbspmiso
1Tbspapple cider vinegaror rice vinegar
1Tbsptamarisoy sauce
1tsptoasted sesame oil
1Tbspfresh gingergrated and juiced
1tspunrefined sugaror maple syrup, optional
1Tbspsesame seedsoptional
pinchred pepper flakesoptional
1-2Tbspwater
Instructions
Put all of the ingredients together in a bowl and stir together until smooth and creamy.
If you’re using this as a dip, leave the water out to keep it thick. If you're using this as a salad dressing, add the water to thin it out.
