When I first went vegan, the obvious question came up: what do I eat now? I hated tofu and I didn’t like salads at the time, so I felt pretty lost! I was worried that I was going to be stuck just eating boring bland salads.
After taking a chef course and learning how to make vegan meals that were super flavorful, it was so exciting! I was looking forward to every meal, and feeling fantastic about my ability to make dishes that were both nourishing and satisfying.

Moroccan Chickpea Stew
One of my most requested recipes is a Morroccan Chickpea stew – full of amazing flavors, you can slow cook it to make it even more flavorful, and it smells amazing as it cooks which means anyone in the house will be drooling by the time you eat.
