No-Bake Matcha Energy Bites

No-Bake Matcha Energy Bites

Matcha green tea is one of my favorites for non-dairy lattes, additions to smoothies, or just enjoying as straight tea – especially when my amazingly talented sister-in-law whisks it! It’s a great source of antioxidants, and it gives that caffeine-energy boost with L-theanine which moderates the caffeine response in your body. So basically, you get the alertness without the crash or jitters like coffee.

The catechins in matcha have been shown to help reduce blood pressure and cholesterol. Green tea has been shown to increase your metabolic and fat burning rates – which is always a good way to start your day!

I absolutely adore matcha just for the flavor… I wanted to find another way to indulge my obsession, so have come up with an energy bite recipe for you! Many of the recipes I see for energy bites are based on dates and/or coconut oil, and I wanted to try an alternative. So this one uses tahini and maple syrup (or bee-free honee) as a base instead of dates and coconut oil. Hope you enjoy them!

Servings: 10 bites

  • 2 Tbsp nut/seed butter I used tahini
  • 1 Tbsp maple syrup or Bee-Free Honee
  • 1/2 cup unsweetened shredded coconut
  • 6 Tbsp almond flour or replace half with plant protein powder
  • 1 Tbsp matcha green tea powder

  • In a large bowl, mix together the nut/seed butter with the maple syrup until smooth.
  • Add the coconut, almond flour (and protein powder if using), and match powder. Mix until thoroughly combined, using your hands if necessary.
  • Form into small balls, about one tablespoon each. Keep in the fridge up to a week.

If you want to boost the sweetness of these bites, try adding 5-6 drops vanilla stevia to the nut/seed butter and maple syrup mixture!
