Need some ideas for quick and healthy vegan lunch recipes to nourish and fuel you through the afternoon? Here’s a whole bunch of ideas to inspire you!

Lunch is important to get some mid-day fuel – but when working from home it’s sometimes harder to remember to take a pause.

A green salad alone will not cut it for me… there needs to be some protein and carbs in there to make it filling. If you eat a proper lunch, you’re less tempted to snack – which can be harder to resist when working from home.

It’s a great chance to boost our vegetable intake, and get some beans in there – both of which add protein, minerals, vitamins, antioxidants, and lots of fiber to our day.

The good side of working from home is that we do have the flexibility to make things in our own kitchen, and use whatever might be in the fridge and cupboards, without having to worry about it being portable.

Pasta makes a great lunch, particularly if you pair it with lots of fresh veggies and maybe some greens. One of my favorite quick lunches is to pair some leftover tomato pasta with red pepper hummus, and top it off with some fresh sprouts and cherry tomatoes.

Mini pizzas can be made with whatever you like: whole grain pita/wrap smeared with hummus or another bean dip, thinly sliced veg, sprinkle salt, in toaster oven 5 minutes (try this Spicy Black Bean Pizza)

If you make extras at dinner, leftover roasted squash/sweet potatoes/beets are beautiful over some greens, with chickpeas and balsamic dressing.

Greens bowl equation: sauteed kale/spinach/chard + whatever veg in your fridge + beans/quinoa/couscous, drizzle with olive oil + balsamic OR toasted sesame oil + tamari = delicious + nutritious.
