Quick & healthy vegan lunch recipes for work from home days
Heather Nicholds, C.H.N.

Need some ideas for quick and healthy vegan lunch recipes to nourish and fuel you through the afternoon? Here’s a whole bunch of ideas to inspire you!

Lunch is important to get some mid-day fuel – but when working from home it’s sometimes harder to remember to take a pause.

A green salad alone will not cut it for me… there needs to be some protein and carbs in there to make it filling. If you eat a proper lunch, you’re less tempted to snack – which can be harder to resist when working from home.

It’s a great chance to boost our vegetable intake, and get some beans in there – both of which add protein, minerals, vitamins, antioxidants, and lots of fiber to our day.

The good side of working from home is that we do have the flexibility to make things in our own kitchen, and use whatever might be in the fridge and cupboards, without having to worry about it being portable.

So, take a browse through the plethora of delicious vegan recipes below, and let your eyes find what’s calling you today…

Healthy vegan lunch recipes for work-at-home days:

Pasta & Noodles

Pasta with Sundried Tomato Pesto and Sprouts

Pasta makes a great lunch, particularly if you pair it with lots of fresh veggies and maybe some greens. One of my favorite quick lunches is to pair some leftover tomato pasta with red pepper hummus, and top it off with some fresh sprouts and cherry tomatoes.

Avocado-Lime Pasta

Or, pair your leftover pasta with fresh mint, zesty lime and creamy avocado. So simple, so delicious, so satisfying…

Pad Thai

This gorgeous plate is a recipe from my dear friend, Tess Challis’ newest book, Healthy Vegan, Happy Body – which you can get a copy of HERE!

Sandwiches & Wraps

Grilled veggie wrap with quinoa salad

Back a wrap full of bean or quinoa salad with vegetables and guacamole, and then grill it in a sandwich press or flip in a ceramic pan. This Creamy Vegan Chickpea Salad would be perfect…

Spicy Black Bean Pizza

Mini pizzas can be made with whatever you like: whole grain pita/wrap smeared with hummus or another bean dip, thinly sliced veg, sprinkle salt, in toaster oven 5 minutes (try this Spicy Black Bean Pizza)

Add some protein to avocado toast with smashed avo+white beans, topped with cherry tomatoes and sprouts.

Scrambled Eggs on Toast

A delicious way to make vegan scrambled eggs, with a great little reminder on why vegans don’t eat eggs.

Meal-Sized Salads & Bowls

Baked vegetables with chickpeas on salad

If you make extras at dinner, leftover roasted squash/sweet potatoes/beets are beautiful over some greens, with chickpeas and balsamic dressing.

Greens bowl equation: sauteed kale/spinach/chard + whatever veg in your fridge + beans/quinoa/couscous, drizzle with olive oil + balsamic OR toasted sesame oil + tamari = delicious + nutritious.

Snap Pea, Arugula, & Farro Salad

4 steps to an absolutely mouthwatering lunch salad…

Peanut Crunch Salad in a Jar

Even if you’re not taking it to go, making it in a jar is an easy way to prep and store in the fridge!

Golden Tofu with Coconut Lime Quinoa

This is one of the healthy and delicious recipes from my friend Tess’ Healthy Vegan, Happy Body cookbook, that you can order HERE.

Soups & Casseroles

Easy Chickpea Tomato Soup

make a big batch of soup for dinner (maybe an easy Chickpea Tomato Soup?), then reheat quickly for lunch adding more greens and whatever seasoning you want
