What I Eat in a Day: Oatmeal, Leftovers & Granola Bars

I woke up and did some stretchy yoga, then had oatmeal & chai, a really late lunch, and made some granola bars from my new book!

5-Ingredient Granola Bars:

½ cup peanut butter, almond or cashew butter, or sunflower seed butter
¼ cup maple syrup or Simple Syrup (from the book)
¼ cup plant-based protein powder or ground almonds, or coconut flour
1½ cup rolled oats
¼ cup dried cranberries

In a large bowl, stir together the peanut butter and maple syrup until smooth.
Add the protein powder, oats, and cranberries and mix thoroughly. Press the mixture into an 8-inch baking dish and refrigerate, if you can, to set for about 15 minutes.
Cut into 12 bars. These will keep in an airtight container in the refrigerator for up to 1 week or at room temperature for about 4 days.

    Love this recipe Heather. What are your fave protein powders please? I remember you had a post on this ages ago but i dont know if you have updated it?

    Hi, Heather:

    I have never heard of ginger people. What is the flavor of that and what kind of protein do you buy? Costco sells a plant based protein.
