Lunch is important to get some mid-day fuel – worth a pause, even when we’re super-busy. A green salad alone will not cut it for me… So we can always use some quick and healthy vegan lunch recipes to nourish us through the afternoon.
It’s a great chance to boost our vegetable intake, and get some beans in there – both of which add protein, minerals, vitamins, antioxidants, and lots of fiber to our day.
For those of us who work from home, we may not have much time for lunch (or just don’t take much time!), but we do have the flexibility to make things in our own kitchen, and use whatever might be in the fridge and cupboards.
