Quick & healthy vegan lunch recipes for people who work from home

Lunch is important to get some mid-day fuel – worth a pause, even when we’re super-busy. A green salad alone will not cut it for me… So we can always use some quick and healthy vegan lunch recipes to nourish us through the afternoon.

It’s a great chance to boost our vegetable intake, and get some beans in there – both of which add protein, minerals, vitamins, antioxidants, and lots of fiber to our day.

For those of us who work from home, we may not have much time for lunch (or just don’t take much time!), but we do have the flexibility to make things in our own kitchen, and use whatever might be in the fridge and cupboards.

Healthy vegan lunch recipes for work-at-home days:

Pasta with Sundried Tomato Pesto and Sprouts

1. leftover tomato pasta mixed with red pepper hummus, maybe topped off with some fresh sprouts

Baked vegetables with chickpeas on salad

2. leftover roasted squash/sweet potatoes/beets over some greens, with chickpeas and balsamic dressing

Grilled veggie wrap with quinoa salad

3. bean or quinoa salad in a wrap with guacamole, grilled (this Creamy Vegan Chickpea Salad would be perfect…)

greens bowl: sauteed kale/spinach/chard + whatever veg in your fridge + beans/quinoa/couscous, drizzle with olive oil + balsamic OR toasted sesame oil + tamari

 

Spicy Black Bean Pizza

mini pizza: whole grain pita/wrap smeared with hummus or another bean dip, thinly sliced veg, sprinkle salt, in toaster oven 5 minutes (try this Spicy Black Bean Pizza)

 

Easy Chickpea Tomato Soup

make a big batch of soup for dinner (maybe an easy Chickpea Tomato Soup?), then reheat quickly for lunch adding more greens and whatever seasoning you want

toast with smashed avo+white beans, topped with cherry tomatoes and sprouts
